Gavaanchi Bhakri is a thick pancake made with bulgar wheat and wheat flour especially during a fast in Goa. Traditionally, this bhakri was made by laying a banana leaf on the pan first and then spreading the dough on top of it. Banana leaves are believed to have great health benefits, besides the fact that they impart a unique fragrance and taste to food when cooked or served on them. I remember when Mummy would fast, usually during the month of shravan, I would ask her to make this bhakri for me!

How to make it:
- Take wheat flour, salt, bulgar wheat, coconut and jaggery in a mixing bowl.
- Add a cup of water and knead into a dough. The dough will be sticky and not firm like chapati dough. Keep the dough aside for about 15 minutes. Divide the dough into three parts.
- Heat a frying pan and add about a tablespoon of oil. Once the oil is hot, add one portion of the dough on to the pan. Spread the dough on the pan to form a thick bhakri while adding extra water as needed. Be careful with this step as the pan is hot and the oil tends to splatter.
- Cover the bhakri with the flame on low and let it cook. This takes about 6-7 minutes.
- Flip it over and cook the bhakri on the other side while keeping the flame on medium. Add more oil if needed.
- Enjoy with tea. This is a very filling breakfast/snack.
