An interesting fact about figs is that it they not fruits but a flower! Regardless, their soft texture, sweet taste and delicate flavor make them one of my favorites to eat! Growing up I loved dried figs and never really had fresh ones. But once I tasted a fresh fig there was no going back! My husband, Mayur, is not much of a fruit eater and I, on the other hand, absolutely love fruits. Needless to say, I end up buying more fruits than I need. I had a huge batch of fresh figs and thought it would be a great way to preserve them in the form of a jam. Do try this recipe!
What you will need:

Servings: Makes 1 1/4 pounds of jam
How to make it:
- Wash the figs thoroughly. Slice them into 4 parts.
- In a vessel, place the figs and add sugar. You can adjust the sugar per your taste. Also, add in the lemon grass and cinnamon stick.
- Mix everything well and set aside for 15 minutes. You will notice that the figs release water and the mixture will begin to moisten.
- Add the zest of one orange along with juice of half an orange. Make sure that you use all fresh ingredients.
- Now let the mixture cook on a medium flame. Stir occasionally. Cook till the mixture begins to thicken up.
- Cool the jam completely before bottling. Ensure that it is stored in a sterile glass bottle. You can sterilize the bottles by boiling it in water and then drying them completely. Store it in the refrigerator to last for a longer time.
- Enjoy this jam with toast for breakfast or use it as a glaze for your meat.
