Cashew burfi is a favorite of many Indians. This sweet cashew fudge is really easy to make and I try to make it at least once a year. This year I decided to make Cashew Diyas instead. Beautifully decorated with food color, these diyas are absolutely delicious and will be a perfect home-made dessert to serve your guests this Diwali.

Mawa/Milk Powder | 3 tablespoons |
Milk | 2 tablespoons |

Powdered Sugar | 3 tablespoons |
Raisins | 13 |
Rose Essence | 5 drops |

Cook time: 30 minutes
Total time: 1 hour
Servings: Makes around 13 diyas
How to make it:
- Start a double broiler.
- In a mixer, make a fine powder of the cashews.
- In a vessel, add powdered cashews, powdered sugar, mawa powder, cardamom powder, rose essence, ghee and milk.
- Mix everything well and place on the double broiler.
- Stir continuously until the mixture is warm and the cashews begin to ooze oil.
- Remove from the double broiler and knead the dough thoroughly until it forms a smooth paste.
- Apply ghee to your hands, take a small amount of dough and roll into diya shapes. Place a raisin to resemble the flame.
- Get creative and decorate them with food color.
