I loved eggs growing up. However, when I moved to the USA that changed fast. I hated eggs! I had tried them all, from organic to cage free, from fried to making curries! They just did not taste the same. They were stinky, huge and tasted horrible, to say the least. Eating an egg was a task for me. So I resorted to boiled eggs which was the only palatable way of preparing an egg to suit my taste. Recently, one of my coworkers started selling eggs from the free range chickens she raised. I decided to give them a try. Voila! I had hit the jackpot! These eggs did not stink! They were delicious! The first thing I made with them was bhurji. As I ate, every bite took me back to my Mom’s kitchen on a Sunday morning where eggs was a staple breakfast. I almost cried and I am not kidding! I had not eaten a good egg in 8 years! I had to post this easy yet delicious recipe which we all take for granted. You know what they say, you don’t know the worth of something until you don’t have it!
What you will need:
Ingredients | Quantity |

Eggs | 5 |
Finely Chopped Onions | 1 cup |
Freshly Chopped Coriander Leaves | 1/5 cup |
Green Chilies | 2 |
Kashmiri Chili Powder | 1 teaspoon |
Oil | 1 tablespoon |
Salt | 1/2 teaspoon |
Turmeric | 1 teaspoon |
How to make it:
- Heat oil in a pan.
- Add the green chilies and finely chopped onions.
- Saute until the onions soften.
- Add turmeric, chili powder and salt. Mix well.
- Break in the eggs.
- Stir continuously to scramble the eggs. Cook till the eggs are of the consistency that you like.
- Garnish with freshly chopped coriander leaves.
- Serve with bread or chapati.
