Fruit leather is a favorite among all kids. However, I despise the sugary fruit leather sold in the market. When we were kids, we ate fruit leather made purely of fruit. It is the tradition that is still carried on in Goa. The main fruit leathers of Goa are the sweet jackfruit leather and the tangy raw mango fruit leather. Here is my attempt to make a semi- raw mango leather.
What you will need:
Ingredients | Quantity |

Mangoes (ripe/raw) | 2 large |
Salt | 1/4 teaspoon |
Pepper | 1/4 teaspoon |
Prep Time: 15 minutes
Cook Time: 4 hours
Serving: 4
How to make it:
- Peel the mangoes and cut them into small pieces.
- Add the mango pieces, salt and pepper to a mixture and grind into a puree.
- Spread the puree on a baking sheet or oven safe mat.
- Dehydrate in the oven at 180 F for at least 4 hours, until all the moisture is gone. Check the saath, every 1/2 hour after initial 2 hours of dehydration.
- Cool the sheets, cut into strips and roll them.
- Enjoy!
