I am all about simple cooking. I try to make meals that are healthy, do not need a lot of time or effort to make, but yet taste delicious. This is one of my recipes that came to being when I was short on ingredients, had a busy schedule but still wanted to make something quick at home. Sometimes, less is more! Hope you all enjoy it as well! It goes perfectly with roti or rice.
What you will need:

Chicken Thighs | 300 grams |
Curry Leaves | 1/2 cup |
Fresh Coconut | 1/2 cup |
Oil | 1 tablespoon |
Pepper | 1 tablespoons |
Salt | 1/2 teaspoon |
Water | 1/2 cup |
Prep Time: 10 min
Cook Time: 20 min
Servings: 2
How to make it:
- Wash and cut the chicken. Marinate it with salt and pepper.
- Make a paste of curry leaves and coconut with 1/2 cup water.
- Add oil to a pan. Add the chicken and brown it slightly.
- Add the paste.
- Cover and cook until the chicken is done.
- Serve with chapati, rice or roti.
