I am a busy working woman. Thus, I like anything that will make my life easier, especially when it comes to cooking. My day starts at 5:30 am and I am usually pretty exhausted at the end of the day. I hate spending all my time in the kitchen and rather spend that time with my husband. Hence, I am always looking for hacks that will cut down my cooking time. Onion paste is one of them! It saves the time of cutting, chopping, sauté of the ingredient. It lets me make curries in a hurry. You can also make it when you have ample onions and do not want them to go waste. Onion paste, if stored in an air tight container and ground without water, lasts for over a month with no issues. So here is my make ahead onion paste recipe.
What you will need:
Ingredients | Quantity |

Onions | 2 kilograms |
Oil | 1/4 cup |
How to make it:
- Dice the onions into large chunks (around 12 pieces of one onion).
- Heat oil in a wide mouthed pan.
- Add the diced onions.
- Sauté until they begins to brown. Stir occasionally to ensure even browning.
- Cool the onions completely.
- Blend into a paste and store in airtight containers in the refrigerator.
- Use as needed for gravies.
