Who does not like chocolate? And if you make a cake out of it even better! I wanted to try to make a chocolate chip cake and came up with this recipe. It was made as a surprise for a very nice gentleman for iftaar. This cake is sure to bring a smile on anyone’s face!

Vanilla Extract | 1 1/2 tablespoons |
Warm Milk | 1/3 cup |

Bake time: 45-60 mins, depending on your oven
Servings: Makes one 9-inch round cake.
How to make it:
- Tip: The butter and eggs need to be at room temperature. A quick way to do that, if you forget, is to use the defrost setting in the microwave to soften the butter. You have to keep a close eye on it so that it does not melt. It will vary based on your microwave settings. To bring the eggs to room temp, just add them to a bowl of warm water. You may have to change the water and repeat the process twice.
- Preheat the oven to 350 degrees F. Grease your cake pan with butter and dust it with flour.
- In a stand mixer, whisk together the butter and sugar until it is creamy.
- Add one egg at a time and whisk for a few seconds.
- Add vanilla extract after the last egg, and whisk for 10 minutes or so at medium speed.
- Pour in the warm milk slowly and whisk for another minute.
- In the meantime, sieve the flour, cocoa powder, baking powder, and salt and set them aside. Tip: Add the chocolate chips to the flour before mixing. This will ensure that the chips are coated with flour and stay suspended in the cake instead of sinking at the bottom as they bake. The sieve will keep them separate from the flour.
- Once the eggs have beaten and incorporated well, add all the flour mixture and whisk quickly until all the batter comes together. Use a spatula to scrape the edge. Do not over-mix!
- Add the chocolate chips and give it one last stir.
- Pour the cake mixture into the greased cake pan.
- Bake on the middle rack for 45-60 minutes, based on your oven and baking pan size, or until a toothpick comes clear when pocked in the center.
- Top with melted chocolate or frosting, if desired. Enjoy!
