Peach Crumble

Summer is my least favorite month! I am not built for the heat. However, the one great thing about summer is it brings with it seasonal fruits. Peaches are one of my favorite things to eat during the summer. I normally try not to mess with my fruit too much and enjoy them as is. However, when it comes to peaches, a good, comforting peach crumble tops it over regular peaches. When I finished my internship, my colleagues threw me a going away party. One of my colleagues made the most amazing peach crumble I have ever had! She was kind enough to share the recipe. This is her family recipe and a dedication to some of the amazing people I have had the chance to work with. Get yourself some peaches from the farmer’s market and try this!

What you will need:

Peaches (Peeled and de-seeded)750 g
Almond Extract1/2 teaspoon
For the Crumble:
Flour1 cup
Oats1 cup
Brown Sugar3/4 cup
While Granulated Sugar3/4 cup
Salt1/4 teaspoon
Cinnamon Powder1/2 teaspoon
Butter6 oz

Prep time: 20 min

Cook time: 45 minutes

Servings: 10

How to make it:

  • Preheat the oven to 350F.
  • Wash, peel, and deseed the peaches. Cut them into slices and add to a pie pan.  Tip: Please use yellow peaches. I find that white peaches turn bitter upon cooking. I also prefer a mix of ripe and slightly raw peaches. The raw peaches impart a slight tartness to the crumble. 
  • Add the almond extract to the peaches, mix well, and set them aside.
  • In a mixing bowl, take flour, brown and white sugar, oats, cinnamon powder, salt and mix well.
  • Dice cold butter into small pieces.
  • Add the butter to the mixing bowl and mix everything well till you get a crumbly texture.
  • Once the crumble is ready, add it on top of the peaches.
  • Bake for 45 minutes to an hour or until the fruit begins to bubble.
  • The crumble is best served with vanilla ice cream.
