Who does not like chocolate cake! A good piece of chocolate cake with a cup of coffee can be the cure for any rough day! Mayur does not like fruits and I am always game to trying new and different types of fruits. I hate that he misses out on such experiences, besides of course fruits being healthy for him! So I always have to find ways to hide fruits in his food. I am wild about cooking fruits and transforming them into something delicious and mouth-watering. He loves chocolate cake! Figs are in season and I thought what better way to have him try figs then add them to cake! The results were amazing and needless to say he was the only one who finished the entire cake!

How to make it:
- Pre-heat the oven to 350 degree Fahrenheit. Ensure that the fig preserves, eggs and butter are at room temperature.
- Line a 9 inch springform pan with butter, dust with a tablespoon of flour and keep it aside.
- Sieve together the flour, unsweetened cocoa powder, salt, baking powder and baking soda. Set this aside as well. This is your flour mix.
- In a cake mixer, add the butter and sugar. Beat until fluffy.
- Add in the eggs, one at a time and beat the mixture.
- Add in the vanilla extract and the fig preserve. You can use store bought fig preserve but I personally prefer home made preserve.
- Once everything is mixed well, add in the flour mixture. Add the flour mixture in four parts and ensure that the flour is mixed well with the liquids before adding the next part.
- Lastly, add in the club soda and give it one last mix.
- Immediately pour the batter into the prepared springform pan. Slice fresh figs and place them on top (optional).
- Bake till a toothpick poked in the center of the cake comes out clean.
- Cool to room temperature and sprinkle with powdered sugar or enjoy warm with a dollop of ice cream.
