Appe are a Maharastrian dish. These are usually made with a batter made from rice and urad dal, mixed with vegetables of your choice and a tempering of cumin and curry leaves. In Goa, the rice bhakari is a popular breakfast item. I once had some left over rice bhakari flour and decided to make appe with it. The results were delicious and this has been a favorite in my house ever since! The Goan style appe are made with rice and coconut milk that are spiced simply with onions, coriander and chilies. This makes a great breakfast item and is also a perfect lunch box recipe for kids. This is an instant recipe and I love to make it on days that I am running late!

Finely Chopped Onion | 1/2 cup |
Green Chili | 1/2 teaspoon |
Oil | 5 tablespoons |
Rice Flour | 1 cup |
Salt | 1/2 teaspoon |
Water | 1/2 cup |

Cook time: 40 minutes
Servings: Makes around 15 appe
How to make it:
- In a bowl, take the rice flour, water and coconut milk. Whisk well.
- Add salt, finely chopped onions, chopped coriander and green chilies to the mixture. Mix everything well.
- Heat the appe pan. Add the batter in the indentations, a little at a time.
- Cover and cook till the appe are done.
- Gently turn them using a butter knife and cook on the other side for a minute or two.
- Serve while warm with chutney.
