This is one of Mayur’s favorite salads and maybe the only salad he eats without making a fuss about it! If you cannot tell yet, he is averted to anything healthy! LOL. Chicken Salad is a versatile dish in my option. It can be eaten as is, used as a stuffing for sandwiches, served as a topping over a cracker or as a dip for chips. It is a simple recipe, especially if you have left over boiled or grilled chicken. It is dish that has the freshness imparted by the apples, the crunch of the nuts, the goodness of the chicken, and the creaminess of the mayo. It is not just a perfect party snack, but a great high protein snack or tiffin box option for your kids. It can be perfect for those summer time picnics as well. What you will need:
Ingredients | Quantity |

Chopped Nuts (preferably walnuts) | 1/4 cup |
Cooked and Shredded Chicken | 1 cup |
Finely Chopped Apple | 1 small |
Mayonnaise | 1/4 cup |
Pepper | 1/4 teaspoon |
Salt | 1/4 teaspoon (Please adjust if your chicken breast is pre seasoned) |
How to make it:
- Take boiled or grilled chicken and shred it into small pieces.
- Tip: If making boiled chicken from scratch, just add chicken breast in a pot of water. The water should be just enough to cover the chicken. Add salt and pepper for taste, 2 crushed cloves of garlic and a bay leaf. Bring the whole mixture to a boil until the chicken breast is cooked. Drain the chicken and shred it. Save the liquid as it can be used as stock for other recipes.
- Add finely chopped apple and nuts to the shredded chicken. ( Walnuts work the best for this recipe. I did not have walnuts in my pantry due to the pandemic 🙁 so ended up using cashews instead).
- Add salt, pepper and the mayonnaise.
- Mix everything well.
- Serve chilled as a salad or dip. You can also use this to make starters by adding it on a cracker. Place it in between toasted slice bread and you have a sandwich. Enjoy!
