Raw Papaya Salad

This is one of my favorite salads to make and eat. It is inspired by “achara”, a raw papaya pickle from the Philippines. However, this fresh salad is easier to make and you don’t have to wait for it to pickle! Try out this fresh plate of rainbow veggie salad next time you do not feel like eating a boring one.

What you will need:

Julienne Raw Papaya 2 cups
Julienne Carrots1 cup
Julienne Raw Mango1 cup
Julienne Cabbage1 cup
Julienne Cucumber1 1/2 cup
Dressing:
Sushi Vinegar1/3 cup
Salt1 teaspoon
Olive Oil1 tablespoon

Prep time: 20 minutes

Cook time: 0 minutes

Servings: 4

 

How to make it:

  • Wash and pat dry all your vegetables.
  • Peel the raw papaya and the raw mango before chopping them. 
  • You will want all your vegetables to be julienne-chopped.
  • For the dressing, mix the sushi vinegar, salt, and olive oil.
  • Pour the dressing over the vegetables and mix well.
  • Enjoy!
