Thai Inspired Peanut Chicken Fried Rice

My husband loves fried rice! He could live off of it if he could have his way! I love trying different recipes of fried rice for the same reason. I recently made Thai Peanut Sauce and wanted to attempt making fried rice with it. This sweet and salty fried rice has an earthy flavor, imparted from the peanuts. It is a perfectly balanced meal! 

What you will need:

Peas200 grams
Pepper1/2 teaspoon
Raw Rice100 grams
Salt1/4 teaspoon
Thai Peanut Sauce1/2 cup
Prep Time: 25 minutes
Cook Time: 15 minutes
Servings: 2

How to make it:

  • Make the Thai Peanut Sauce.
  • Marinate the chicken with 1/4 cup of the peanut sauce for at least 2 hours.
  • Cook the rice with 1/4 teaspoon of salt and double the amount of water in a rice cooker. 
  • Heat oil in a pan and add the marinated chicken to it. Cook until done. 
  • In the same pan, add finely chopped carrots and peas. Add the remaining peanut sauce. Sauté for 3 minutes. 
  • Add the cooked rice and pepper powder to the vegetables.
  • Mix everything well. Taste for salt and add more per your taste if needed. 
  • Add the chicken and give one last mix. 
  • Serve hot!
