My husband loves fried rice! He could live off of it if he could have his way! I love trying different recipes of fried rice for the same reason. I recently made Thai Peanut Sauce and wanted to attempt making fried rice with it. This sweet and salty fried rice has an earthy flavor, imparted from the peanuts. It is a perfectly balanced meal!
What you will need:

Chicken | 200 grams |
Oil | 1 tablespoon |
Peas | 200 grams |
Pepper | 1/2 teaspoon |
Raw Rice | 100 grams |
Salt | 1/4 teaspoon |
Thai Peanut Sauce | 1/2 cup |

Cook Time: 15 minutes

How to make it:
- Make the Thai Peanut Sauce.
- Marinate the chicken with 1/4 cup of the peanut sauce for at least 2 hours.
- Cook the rice with 1/4 teaspoon of salt and double the amount of water in a rice cooker.
- Heat oil in a pan and add the marinated chicken to it. Cook until done.
- In the same pan, add finely chopped carrots and peas. Add the remaining peanut sauce. Sauté for 3 minutes.
- Add the cooked rice and pepper powder to the vegetables.
- Mix everything well. Taste for salt and add more per your taste if needed.
- Add the chicken and give one last mix.
- Serve hot!
