Thai Style Peanut Sauce

My love affair with Thai food is mostly because of its spice. However, there are few mild Thai dishes that I love as well. Peanut sauce is one of them! It is so versatile and can be used as a dip, marinade, salad dressing, cooking sauce, you name it! This is by no means the original recipe for the peanut sauce, however, it tastes similar. I love using this sauce as a marinade for my meats. Hope you guys like it as much as I do! 

What you will need:

Cilantro (finely chopped or dried)1 tablespoon
Galangal or Ginger1 inch
Garlic1 clove
Jaggery or Sugar4 tablespoons
Peanut Butter (unsweetened)3/4 cup
Red Chili Powder1 teaspoon
Rice Wine Vinegar1/5 cup
Sesame Oil or Any Other Oil1/4 cup
Soya Sauce1/4 cup
Prep Time: 15 minutes
Servings: Makes around 1 1/2 cup of sauce

How to make it:

  • In a food processor, add peanut sauce, galangal, garlic, soya sauce, vinegar, jaggery, cilantro, and chili powder.
  • Blend everything well together, adding sesame oil as it blends to make a smooth paste. 
  • Taste for salt and add if needed. I did not add any because my peanut butter and soy sauce imparted the right amount of dal
  • Your sauce is ready! Store in an air tight container. 
  • It is a perfect dipping sauce for spring rolls or bbq meats, and can be uses as a marinade for meats. You can also add it over noodles, salads or rice! 
  • Tip: To increase the shelf life of the sauce, substitute fresh ingredients with dried ones. Use garlic powder and ginger powder instead of garlic and galangal. You can also substitute fresh cilantro with dried leaves.
