Bolo De Laranja

Today would have been the 60th birthday of one of Goa’s greatest sons, Wendell Rodricks. He put Goa on a global fashion state and made a place as a Bollywood fashion designer at a young age. His passion for Goa reflected in his work, especially his project on reviving the Kunbi saree. He was an environmentalist, a gay rights activist, and a Padma Shree award winner. Earlier this year, Goa lost this talented son. He wrote a book called “Poskem” and in the book mentioned a recipe by his Aunt Tia Elsa. I personally think this was one of his most renowned recipes. It has been on my mind to try this recipe for a while. Today being Wendell’s 60th birthday, I thought it would be a perfect homage to this amazing man. 

What you will need:

Extra Butter for Greasing the Pan1 teaspoon
Flour200 grams
Orange Juice freshly squeezed from 2 oranges. 1 for the batter and 1 for soaking the cake.
Orange Rindof 1 orange
Powdered Sugar2 tablespoons
Sugar200 grams
Prep Time: 40 minutes
Cook Time: 30-45 minutes, depending on your oven
Servings: 10

How to make it:

  • Preheat the oven to 350 degrees F.
  • Tip: Ensure that the eggs, butter, and orange juice are all at room temperature. 
  • Grease a cake pan with butter. 
  • Cream together sugar and butter which is at room temperature. 
  • Add the eggs, one at a time, and beat until frothy. 
  • Add the rind of one orange along with the juice of one orange (around 100 ml). Mix well. 
  • Sieve in the flour and baking powder. Mix everything well. 
  • Pour the cake batter in the greased baking pan.
  • Bake in the oven until a toothpick comes clean. 
  • Once out of the oven, let it cool completely. 
  • Turn it over and add the juice of another orange. 
  • Dust with powdered sugar. 
  • Enjoy!
