Home made custard

No matter what the occasion, birthday party, wedding, anniversary, we had to have custard on the menu while I was growing up. Fruits and nuts covered in this silky, creamy, sweet, eggy goodness bring back so many memories. I looked forward to parties just for some custard and jelly. Things have changed since then and now different kinds of desserts take the attention away from the humble custard. However, it still remains a favorite of many! I tried making custard from scratch since I am not a big fan of processed, dyed, chemical laden food. The results were far better than the original powdered form and I have never looked back.  It takes less than 20 minutes to make and can be a quick fix to satisfy those sweet cravings. 

What you will need:

Eggs Yolks 4

Whole Milk500 ml

How to make it:

  • Keep milk for boiling on a medium flame. 
  • In the mean time, separate the yolks from the whites. Tip: Make sure the eggs are at room temperature to prevent scrambling during the cooking process. You will only need the yolks for this recipe. 
  • Add sugar and beat the egg yolks till they turn pale. 
  • Add corn starch and vanilla extract. Beat until the cornstarch leaves no lumps. 
  • The milk should have come to a boil by now. Lower the flame to a slow simmer. 
  • To prevent scrambling of the eggs, add a splash of the milk into the eggs and whisk vigorously. 
  • Now, add the egg mixture to the milk and whisk continuously. It is very important to do this to prevent scrambling. 
  • Continue whisking until the mixture thickens which will take around 2 minutes. You can check by running you finger on the back of a spoon dipped in the custard. If it leaves a trail, it is done. 
  • Remove from the flame, cool to room temperature and then refrigerate. 
  • Add fruits and nuts to the custard, use it as a filling for cakes, serve with with jelly or pour it while warm over some apple crisp! Enjoy!
  • Tip: If adding over fruits, avoid papayas, citrus fruit and pineapples as they tend to make the custard bitter. Apples, grapes, bananas, mangoes, pomegranate and berries work well.
