Cauliflower Parantha

Cauliflower is one of Mayur’s favorite vegetables. Hence, it frequently shows up on my menu at home. I have tried making different recipes with cauliflower, like curries, stuffed paranthas, cauliflower rice, roasted cauliflower, to name a few. Recently, one of my friends, Bhishma made cauliflower parathas that were not the traditional stuffed kind. She just mixed them with the flour and made a roti out of it. The thing that attracted me to try this recipe was not just the deliciousness of this simple roti but the ease of making it as well. Soon I was on the phone with her asking her for the recipe. So here it is! Try this delicious recipe for breakfast or as an evening snack. 

What you will need:

Chopped Cilantro2 tablespoons
Cumin Powder1 teaspoon
Garam Masala Powder1 teaspoon
Garlic20 grams
Ginger10 grams
Green Chilies10 grams
Kashmiri Chili Powder2 teaspoon
Oil1 teaspoon
Salt1 teaspoon
Turmeric2 teaspoon
Wateras needed
Wheat Flour2 cups
Ghee for roasting4 tablespoons
Prep Time: 15 minutes
Cook Time: 30 minutes
Servings: Makes around 15, 10-inch parathas

How to make it:

  • In a blender, make a paste of the ginger, garlic, and green chilies.
  • Finely chop the cauliflower. I used the food processer. You can grate the cauliflower as well. Tip: The finer the cauliflower is, the easier it is going to be to make the rotis.
  • To the finely chopped cauliflower, add finely chopped cilantro, the ginger-garlic-chili paste, all the spices, and salt. Mix everything well. 
  • Add the wheat flour and besan. Knead everything into a tough dough, adding water as needed. Tip: Cauliflower releases water when kneaded. So add little water at a time. I had to use only 1/4 cup of water but it may vary based on the water content of the cauliflower you use. 
  • Heat a tawa or frying pan. 
  • Take a small ball of dough. Roll it out using dry dough as needed to form a flatbread. 
  • Roast it on both sides on a medium flame. 
  • Apply ghee on top and place it in a keep warm container. 
  • Repeat until the dough is all finished. 
  • Serve with yogurt and pickle. 
  • Enjoy!
