Chicken Pizza Base

With my healthy living pledge, not eating things I love has been really hard! So I have come up with creative ideas to make them with healthy alternatives. Pizza is one of my favorite fast foods! I miss being able to pick up the phone and order a pizza on a Friday night. I have tried the gluten-free options and they all taste terrible! One of my friends wanted a gluten-free alternative to pizza. So I decided to make a chicken pizza base. Who misses gluten when there is chicken, am I right? Besides, this is a high protein pizza which makes it a guilt-free indulgence! 

What you will need:

Cumin Powder1/2 teaspoon

Finely Chopped Cilantro50 grams
Finely Chopped Garlic10 grams
Minced Chicken/Turkey1 lb
Oil1 teaspoon
Paprika1/2 teaspoon
Rice Flour4 tablespoons
Salt1 teaspoon
 
Prep time: 15 minutes
Bake time: 45 minutes
Servings: This recipe makes a 10-inch pizza and serves 4. 

How to make it:

  • Preheat the oven to 350 degrees F.
  • In a bowl, add finely chopped cilantro, finely chopped garlic, salt, an egg, pepper, paprika, and cumin powder. Add the minced chicken or turkey along with the rice flour. Mix everything well. Tip: You can add any seasoning to the base. Make it your own 🙂
  • Tip: I find that a springform cake pan works best for the next step. It is easier to remove the pizza and it provides even heat. If you don’t a pizza stone or a cookie sheet will work as well! 
  • Oil the bottom of the pan you will be baking the pizza in. Add the minced mixture and spread evenly into a thin layer. 
  • Place it in the oven on the middle rack for 15 minutes. This will ensure that the moisture evaporates from the chicken. 
  • Remove it out. Add pizza sauce, topping of your choice, and cheese. 
  • Tip: My quick pizza sauce is yummy and easy to make if you don’t like store-bought options or just don’t have the time and patience to make your own. Just take 1/2 cup tomato ketchup (spicy is better!!) and add 1/4 cup coconut powder to it. It has to be coconut powder, not desiccated coconut. Mix well! Your sauce is ready 🙂  
  • Place it back in the oven and bake for another 12 minutes. 
  • Enjoy this guilt-free pleasure!
