Noon tea is a pink tea from the Kashmir region of India. Usually a salty tea, it is more popular in Pakistan as a sweet version. This beautiful tea is served with pistachios and almonds. It is a long process to make the tea but the concoction once made can be stored for up to 2 weeks in the refrigerator and used as needed.
What you will need:

Ice Cold Water | 6 cups |
Salt | 1/3 teaspoon |
Baking Soda | 1 1/2 teaspoon |
Cinnamon Stick | 2 inches |
Cardamom Pods | 4 |
Star Anise | 1 |
Milk | as needed |
Pistachio | as needed |
Almonds | as needed |
Total time: 1 hour
Servings: Makes 1 cup noon tea concoction
How to make it:
- Add Kashmiri tea leaves to 3 cups of ice-cold water. Boil and reduce the tea to approximately 1 cup.
- Add another 3 cups of water along with cinnamon, cardamom, and star anise. Add the salt and baking soda. Stir for 5 minutes. Tip: If you want sweet tea, omit the salt.
- Let the tea reduce again to 1 cup, stirring frequently. Your concoction is ready.
- Heat milk along with sliced pistachio and almonds. Add sugar if you desire. For 1 cup of milk, add around 1/4 cup of concoction.
- Bring it to a boil and your beautiful pink tea will be ready.
