This deliciously healthy salad with vermicelli, colorful veggies, and earthy peanut sauce will make you forget that you are eating a salad! As I always say, healthy eating does not have to be boring! Try this salad and you can thank me later!

What you will need:

Mixed Veggies 3 cups
Rice Vermicelli Noodles70 grams
Satay Sauce1/2 cup
Toasted Peanuts3 tablespoons
Toasted Sesame Seeds2 tablespoons
 
Prep Time: 25 minutes
Servings: 4

How to make it:

  • Julienne cut all the vegetables of your choice. I used carrots, cabbage, bell peppers, spring onions, and cucumbers.
  • Pour hot water over the rice vermicelli. Let it sit for 5 minutes and then drain the liquid. 
  • In a mixing bowl, add the vermicelli, the veggies, and the satay sauce.
  • Mix everything well.
  • Top with toasted sesame seeds and peanuts.
