Cupcakes are just tiny bundles of joy in two bites. It is a perfect dessert for any occasion. But when someone does not eat eggs, it is really hard to make a good cupcake. There was a trend last year was to make cakes out of bourbon biscuits. This was so intriguing! I have made a couple of cakes using biscuits now and they are surprisingly delicious. I have no idea what the science behind turning biscuits into cakes is, but hey, it works! These cupcakes are easy to make in literally one vessel! Wouldn’t think you would hear that with baking now, did you? They are a perfect treat to make with your little ones. Add some sprinkles and toppings of your choice and go crazy!

Bourbon Biscuits | 250 grams |
Instant Coffee | 2 teaspoons |
Milk | 175 ml |

Chocolate Chips | 125 grams |
Cream Cheese | 100 grams |
Toppings of Your Choice | as needed |
Prep time: 15 minutes
Bake time: 15-25 minutes

Servings: Makes 10 cupcakes
How to make it:
- Preheat the oven to 350 degrees F.
- Line the cupcake pan with cupcake liners.
- In a mixer or food processor, add biscuits along with the coffee, a pinch of salt, and baking powder. Blend into a fine powder.
- Add the vanilla extract. Then start adding milk which is at room temperature to it, a little at a time.
- Mix well till you get a runny cake batter consistency.
- Pour the mixture into cupcake liners and bake in the oven for 15-25 minutes, based on your oven. Take the cupcakes out when a toothpick comes out clean when poked in the center.
- Remove the cupcakes immediately and let them cool on a cooling rack.
- Make the frosting while the cupcakes are cooling.
- Start a double boiler and melt the chocolate chips. If you don’t want to go through the trouble of doing this, just heat the chocolate chips in the microwave in 15-second increments, stirring every time you take them out to make sure they don’t burn and melt evenly.
- Add cream cheese to the melted chocolates. Make sure that the cream cheese is at room temperature.
- Mix the cream cheese well with the chocolate. This is the simplest frosting you can make. You can add any other frosting of your choice to these cupcakes as well.
- Top the cupcakes (once completely cooled) with the frosting. Add toppings like sprinkles, nuts, fruits of your choice. Enjoy!
- Tip: You can replace the bourbon biscuit with any cream biscuit of your choice. You can make this into a cake as well by pouring the batter in a cake pan that has been buttered and dusted, and lined with parchment paper. Just adjust the bake time. A cake will usually take around 45 minutes to bake.
